Air Fryer Lobster Thermidor
Ingredients
1 pound lobsters
2 tablespoons celery and onion mix
1 tablespoon fresh parsley, chopped
1 teaspoon freshly squeezed lemon juice
1/3 cup mayonnaise
1/3 cup sliced mushrooms
1garlic clove, peeled and minced
1 teaspoon Dijon mustard
2 tablespoons unsalted butter, melted
1½ teaspoons Old Bay Seasoning
Directions
Shell lobster splits in 2, then remove the meat, reserving shells, and roughly chop. Set aside.
In a large mixing bowl, combine the lobster meat, celery, and onion mix, parsley, lemon juice, mayonnaise, Old Bay Seasoning, garlic, and Dijon mustard. Mix well.
In a large mixing bowl, combine 2 cups of kosher salt and 2-3 tablespoons of water. Mix to reach the consistency of wet sand. Place in the middle of the air fryer basket.
Spoon the lobster mixture into reserved lobster shells, top with mushrooms, then place them into wet salt, so the shells sit upright. Drizzle with melted butter.
Set the air fryer to the fish cycle. Fry for 18 minutes. Serve hot.
