Air Fryer Glazed Pork Belly Bites
Ingredients
3 garlic cloves, thinly sliced
1/3 cup maple syrup
1 tbsp soy sauce
3/4 pound pork belly, sliced into roughly 1 inch cubes
1 & 1/2 tsp sea salt
1 cucumber
1 red chilli, thinly sliced
bamboo cocktail skewers, to serve
Directions
Place the garlic, maple syrup, and soy sauce in a microwave-safe bowl. Cover and microwave on high for 4 minutes.
Carefully remove from the microwave. Set the glaze aside while you prepare the pork belly.
Place the pork belly pieces and sea salt in a bowl. Mix until well coated. Spread the pork belly pieces out in the air-fryer basket. Set your Air Fryer to 350°F and cook for 20 minutes.
Remove the tray, turn the pieces over, and return to the Air Fryer for another 5 minutes.
While the pork belly is cooking, use a mandolin to shave the cucumber into long, thin slices.
Place the crispy pork pieces into a bowl or onto a baking tray. Pour the glaze over the pork and toss until well combined.
To serve, thread one end of a cucumber slice onto a skewer. Add a piece of glazed pork belly, wrap the cucumber around the pork, and skewer again. Add a slice of red chilli for a spicy kick. Serve immediately while warm.
