Air Fryer Cacio E Pepe Fritters
Ingredients
2 pounds spaghetti , or linguine pasta
1 cup shaved Parmesan cheese , or pecorino romano cheese
1/4 cup all-purpose flour
3 large eggs
1 1/2 teaspoon Kosher salt
3 teaspoons black pepper
Directions
Start by cooking the spaghetti according to package instructions, then rinse with cold water, and set aside.
In a large bowl, combine the chilled spaghetti, grated Pecorino Romano cheese, flour, freshly ground black pepper, and eggs. Mix everything thoroughly until the spaghetti is well-coated with the egg and cheese mixture. This will help bind the fritters together.
Preheat the air fryer to 350 degree F, for 3-5 minutes. Line the air fryer basket with parchment paper, after preheating. Spray the parchment paper with nonstick cooking spray or brush with olive oil. This will prevent the fritters from sticking to the parchment paper.
With a fork and a large spoon, twirl approximately 2 tablespoons of the spaghetti mix, then carefully place it onto the parchment-lined air fryer basket to form a bundle. Repeat the process to create three additional bundles. Note that you’ll need to prepare these in batches!
Spray the tops with olive oil spray or brush with olive oil. Set cook time for 8-10 minutes, halfway during the cooking process, flip, spray again with olive oil spray or brush with olive oil.
Once cooked, let the fritters cool for a couple of minutes before serving. They can be enjoyed as is or with a side of marinara sauce for dipping.
