Air Fryer Crispy Zucchini
Ingredients
1½ cups panko breadcrumbs
▢ ½ cup grated parmesan cheese
▢ 2 teaspoons onion powder
▢ 1 teaspoon Italian seasoning
▢ ½ teaspoon kosher salt
▢ ½ teaspoon fresh cracked black pepper
▢ 2 medium-sized zucchini each zucchini weighed 7 ounces
▢ 1 large egg
▢ 4 tablespoons half and half
Directions
Add the panko breadcrumbs, parmesan cheese, onion powder, Italian seasoning, kosher salt, and pepper to a medium-sized bowl. Stir to combine. Set it aside.
Slice the end of the zucchini off and discard. Slice the zucchini into ⅛-inch round slices. (If you prefer a thicker slice, remember to adjust the cooking time accordingly)
Add the egg and half and half to a small bowl. Whisk to incorporate completely.
Line a baking sheet with parchment paper.
Dip the sliced zucchini into the egg mixture, then dip it into the breadcrumb mixture. Lay the breaded slices onto the prepared baking sheet. Repeat for the remaining slices.
Remove the air fryer basket and spray with non-stick cooking spray.
Preheat the air fryer to 400°F for 3 minutes.
Lay the breaded zucchini slices in a single layer in the air fryer basket. Generously spray the breaded zucchini slices with non-stick cooking spray. Cook for 9-10 minutes. If you sliced your zucchini thicker, add extra time. Serve while hot.
