Air Fryer Taquitos

Ingredients

10-12 corn tortillas
12-16 ounces cooked ground beef, chicken or meat of choice (taco seasoning optional)
1 cup shredded cheese
non-stick spray
salsa, sour cream, green onion, black olives (for dipping and garnish)

Directions

Cook ground beef (or meat of choice) first. This is also a great recipe for leftover meat. I like to cook the ground beef with taco seasoning for more flavor. Once your meat is fully cooked or re-heated, remove it from the heat and set it aside. While your meat is cooking or heating, shred your cheese or have it ready for taquito assembly.

Wrap the corn tortillas in a damp paper towel and cook in the microwave for about 30-45 seconds to warm up for rolling. Keep them wrapped in a paper towel until you are ready to roll the tortilla.

Place one tortilla on your work surface, sprinkle with cheese and meat, and roll up from end to end. Place a toothpick on either end of the rolled taquito in order to keep the meat and cheese inside and to keep the taquito from rolling open while cooking. Assemble as many taquitos as your air fryer will hold. Mine only holds 4 at a time so I roll 4 and leave the rest of the tortillas in the paper towel until I’m ready to assemble more.

Spray the basket of your air fryer with non-stick spray. Place the rolled taquitos in the basket making sure there is a little room between each one and spray again with non-stick spray. Cook at 375°F for 4 minutes.

Carefully remove the toothpicks, flip, spray, and cook for an additional 4 minutes. While your taquitos are air frying, you can assemble more for the next batch!

Once the taquitos are done, remove them from the basket and continue cooking the rest (don’t forget to remove the toothpicks!). Serve with salsa, sour cream, green onions, black olives, or whatever dip and garnish you love. Enjoy!
