Air Fryer Enchilada Lasagna
Ingredients
500g lean minced beef (5% fat or less)
1 small onion, finely chopped
2 cloves garlic, minced
1 tsp ground cumin
1 tsp paprika
1 tsp chili powder (adjust to taste)
1/2 tsp salt
1/4 tsp black pepper
1 cup enchilada sauce (or spicy salsa)
4 small flour or corn tortillas
1/2 cup fat-free natural yogurt or quark (optional layer)
1 cup reduced-fat shredded cheese (cheddar or mozzarella)
Fresh coriander, for garnish
Low-calorie cooking spray
Directions
Spray a pan with low-calorie spray and cook onion and garlic over medium heat until soft.
Add minced beef and cook until browned. Drain excess fat if needed.
Stir in cumin, paprika, chili powder, salt, pepper, and enchilada sauce. Simmer for 5 minutes.
Cut tortillas to fit a small air fryer-safe dish.
Layer: start with a tortilla, then spoon on meat sauce, a little yogurt (if using), and cheese. Repeat until all ingredients are used, ending with cheese on top.
Preheat air fryer to 180°C (356°F).
Place the dish in the air fryer basket and cook for 18–20 minutes, or until golden and bubbly on top.
Let rest for 5 minutes, then garnish with chopped coriander and serve with a side salad or extra yogurt.
