Air Fryer Carrot Cake
Ingredients
For the Cake:
1 cup grated carrots (about 2 medium carrots)
1 cup all-purpose flour
½ cup brown sugar
¼ cup granulated sugar
½ cup vegetable oil (or melted butter)
2 large eggs
1 tsp vanilla extract
1 tsp baking powder
½ tsp baking soda
1 tsp ground cinnamon
½ tsp ground nutmeg
¼ tsp salt
½ cup chopped walnuts or pecans (optional)
½ cup raisins (optional)
For the Cream Cheese Frosting:
½ cup cream cheese, softened
¼ cup unsalted butter, softened
1 cup powdered sugar
½ tsp vanilla extract
Directions
In a mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
In another bowl, mix the oil, brown sugar, granulated sugar, eggs, and vanilla extract until smooth.
Gradually add the dry ingredients to the wet ingredients and mix until just combined.
Fold in the grated carrots, nuts, and raisins if using.
Grease a small round or square cake pan (6-7 inches) that fits inside your air fryer. Pour the batter evenly into the pan.
Preheat the air fryer to 160°C (320°F) for 3 minutes.
Place the pan in the air fryer basket and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
Beat the cream cheese and butter together until smooth.
Gradually add the powdered sugar and vanilla extract, mixing until creamy.
Once the cake is completely cool, spread the cream cheese frosting evenly on top.
Optionally, garnish with additional nuts or shredded carrots.
