Air Fryer Chocolate Chip Bread Pudding

Ingredients

4 slices white sandwich bread, cubed
4 tablespoons unsalted butter, divided
1/2 cup (125 ml) half-and-half
2 egg whites
1/4 cup plus 1 tablespoon granulated sugar
1 teaspoon vanilla extract
1/4 cup semisweet chocolate chips
2 tablespoons corn syrup
1 tablespoon Bourbon
1/8 teaspoon salt

Directions

In a microwavable measuring cup, combine the corn syrup, 2 tablespoons unsalted butter, 1 tablespoon sugar, Bourbon, and salt. Microwave until the mixture melted and bubbling, for about 2 minutes. Stir well to combine and set aside.

Grease 2 oven-safe ramekin baking dishes with cooking oil. Set aside.

Melt the remaining butter in the microwave.

In a mixing bowl, combine half-and-half, egg whites, sugar, and vanilla. Mix well. Slowly pour the melted butter and whisk until smooth.

In a separate bowl, place cubed bread and pour the batter over. Stir well until bread completely coated with batter.

Place half of bread mixture into the grease ramekins Sprinkle with half of chocolate chips. Divide the remaining bread mixture between the two dishes. Top each dish with remaining chocolate chips.

Place the dishes in the air fryer basket. Fry at 325 F (160 C) for 12-14 minutes, or until golden brown.

Remove fried bread pudding from the fryer and transfer to a serving plate. Serve warm with Bourbon sauce.
