Air Fryer Chocolate Chip Cookies
Ingredients
1/2 cup unsalted butter, at room temperature
1/2 cup coconut sugar
1/4 cup cane sugar
1 large egg, beaten
1/2 teaspoon vanilla extract
1 cup all-purpose flour
1/4 cup rolled oats
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup chocolate chips, plus extra for topping
Directions
In a large mixing bowl, combine butter and sugars. Using an electric mixer, beat until creamy and smooth.
Using another mixing bowl, combine beaten eggs and vanilla extract. Beat well and add to the butter mixture. Beat until creamy and lightened in color.
Using a third mixing bowl, combine all-purpose flour, oats, baking soda, and salt. Stir until well combined. Gradually beat into the wet mixture until just combined. Stir in chocolate chips.
Scoop 1½ tablespoons of the cookie mixture and transfer them to a baking sheet. Top with extra chocolate chips. Cover and refrigerate for a few hours or overnight.
Remove chilled cookies from the refrigerator. Line the air fryer basket with parchment paper. Working in batches, place the cookies in a single layer in the lined air fryer basket.
Fry at 290 F (195 C) for 10 minutes, or until edges are set and tops are golden brown. Allow to cool cookies in the air fryer for 10 minutes, then remove them from the fryer and transfer them to a cooling rack. Allow them to cool completely. Repeat with the remaining cooking dough. Enjoy!
