Air Fryer Lamb Kebabs

Ingredients

1 tablespoon cooking oil
1 pound (480 g) ground lamb
1/4 cup chopped fresh parsley
1 tablespoon minced garlic
2 tablespoons kofta kebab spice mix
1 teaspoon kosher salt

Directions

In a large mixing bowl, combine all ingredients. Using an immersion blender, blend until smooth. Cover the lamb mixture and refrigerate for at least 30 minutes.

Preheat your air fryer to 400 F (200 C) for 5 minutes.

Remove cooled lamb mixture from the refrigerator. Using hands, shape the mixture and divide into four, making long sausage shapes. Tread into soaked bamboo skewers.

Place kebabs in the air fryer basket. Fry for 10 minutes or until internal temperature is 145 F (70 C) Serve with tzatziki sauce.

Kofta Kebab Spice Mix:
1 tablespoon coriander seeds
1 tablespoon cumin seeds
1 teaspoon whole black peppercorns
1 teaspoon allspice
1/2 teaspoon cardamom seeds
1/2 teaspoon turmeric

Using a coffee grinder, grind all ingredients. Store in an airtight container in a cool place.
