Air Fryer Shepherd’s Pie
Ingredients
For the Meat Filling:
1 lb ground lamb (or beef)
1 small onion, finely chopped
2 cloves garlic, minced
1 cup frozen mixed vegetables (peas, carrots, corn)
2 tablespoons tomato paste
1 teaspoon Worcestershire sauce
½ teaspoon salt
½ teaspoon black pepper
½ teaspoon dried thyme
½ cup beef broth
For the Mashed Potato Topping:
2 large potatoes, peeled and cubed
2 tablespoons butter
¼ cup milk
½ teaspoon salt
¼ teaspoon black pepper
Directions
Boil the potatoes in salted water for 10–12 minutes until tender.
Drain and mash with butter, milk, salt, and pepper until smooth. Set aside.
In a skillet over medium heat, cook ground lamb (or beef) until browned.
Add onion and garlic, cooking for 2–3 minutes until soft.
Stir in tomato paste, Worcestershire sauce, salt, pepper, thyme, and beef broth.
Simmer for 5 minutes, then mix in frozen vegetables and cook for another 2 minutes.
Preheat the air fryer to 375°F (190°C) for 3–5 minutes.
Spoon the meat mixture into an air fryer-safe baking dish (about 6–7 inches).
Spread the mashed potatoes evenly over the meat.
Sprinkle with shredded cheddar cheese (if using).
Place the dish in the air fryer and cook at 375°F (190°C) for 15–20 minutes, until the top is golden brown and crispy.
Let it cool for 5 minutes before serving. Enjoy your crispy-topped Shepherd’s Pie.
