Air Fryer Crispy Parmesan Panko Pork Chops

Ingredients

4 bone-in pork chops (loin, about 3/4 inch thick and 1 3/4 lb. total)
1/2 tsp. salt
1/2 tsp. black pepper
1/2 cup all-purpose flour
2 large eggs
1 cup Italian seasoned panko bread crumbs
1/3 cup grated Parmesan cheese (preferably freshly grated)
1 1/2 Tbsp. chopped fresh parsley (plus more for serving)
1 1/2 tsp. lemon zest
1 1/2 tsp. garlic powder
nonstick cooking spray (high-heat spray such as avocado oil)
lemon wedges

Directions

Sprinkle pork chops with salt and pepper. Place flour in a shallow dish. Beat eggs in a separate shallow dish. Combine panko, Parmesan, 1 1/2 Tbsp. parsley, the lemon zest, and garlic powder in a third shallow dish.

One at a time, dredge pork chops in flour, shaking off excess; then turn in the egg; and finally dredge in the panko mixture, pressing to adhere. Set pork chops aside.

Set the basket in place in an air fryer. Close the lid and program the air fryer to 400°F for 8 minutes. Preheat according to instructions for your air fryer.

Evenly spray tops of pork chops with cooking spray. Add 2 pork chops to the air fryer basket, oiled side up (you may have to cook 1 chop at a time if you’re using a smaller air fryer; they should not be touching). Cook chops, turning them over halfway through cooking, until they’re browned and crispy and an instant-read thermometer registers about 145°F when inserted into the thickest part (or until they’re done the way you like), about 8 minutes total. Add time if needed. Transfer pork chops to a platter and loosely drape with foil.

Repeat to cook the remaining 2 pork chops, omitting the preheating step. Add pork chops to the platter. Sprinkle with parsley and serve with lemon wedges.
