Air Fryer Honey Mustard Pork Loin
Ingredients
1/4 cup Dijon mustard
3 tablespoons honey
1 tablespoon olive oil
2 tablespoons white wine vinegar
1 tablespoon soy sauce
salt and freshly ground black pepper, to taste
1ΒΌ pounds pork tenderloin
3/4 pound small potatoes
1/2 cup sliced fried mushrooms
Directions
Preheat your air fryer to 400 F (200 C) for 5 minutes.
In a large mixing bowl, combine the honey, mustard, vinegar, soy sauce, and seasoning. Mix well.
Place pork tenderloin into the bowl and dip it in the mustard, then roll it around on a plate until it is coated with the mustard mixture on all sides.
Place potatoes and olive oil in a separate bowl. Season with salt and black pepper. Set aside.
Place pork loin into the air fryer basket. Fry at 400 F (200 C) for about 20 minutes, or until a thermometer inserted in the center of the meat shows 145 F (63 C)
Remove fried pork from the fryer and transfer it to a cutting board. Let rest for 10 minutes, then cut it and baste it with more honey-mustard sauce. Sprinkle with fried mushrooms.
Place oiled potatoes in the air fryer basket. Fry at 400 F (200 C) for 10 minutes, shaking halfway through. Serve with fried pork.
