Air Fryer Schnitzel

Ingredients

1 lb. pork tenderloin (cut into 4 pieces)
salt
black pepper
1/2 cup flour
2 tsp. onion powder
1 tsp. garlic powder
2 eggs (whisked)
2 cups bread crumbs
non aerosol olive oil spray

Directions

Preheat your air fryer to 380°F.

Slice a pork tenderloin into 4 sections.

Place a pork cutlet in between two pieces of plastic wrap and use a mallet to pound out the meat until it is about 1/4 inch thick.

Season each cutlet with salt and pepper.

In a shallow bowl, mix together the flour with onion powder and garlic powder.

In another bowl scramble the eggs.

Finally in a third bowl, add the breadcrumbs.

Dip the seasoned pork cutlet in the flour drudge, then in the egg wash, and then finally in the breadcrumbs.

Spray the outside of the cutlet with olive oil spray on both sides and place in the air fryer basket.

Without overcrowding the basket (you will likely need to do multiple batches), air fry the pork schnitzel at 350°F for 12-14 minutes until the outside is light brown and crisp. Cooking times can vary by air fryer, ensuring the center of the pork schnitzel reaches 145°F internal temperature.
