Air Fryer Scotch Eggs
Ingredients
1 pound uncooked bulk sausages
6 hard- -boiled eggs, shelled
1-2 raw eggs, beaten
1 cup almond flour (coconut flour, or preferred coating)
Directions
Divide the sausages into 6 equal parts. Using a spoon, flatten each sausage portion into a thin patty, large enough to wrap around a hard-boiled egg.
Lay shelled egg in the center, then wrap flattened sausage around the whole egg. Repeat for all eggs.
Dip the sausage-wrapped eggs in the beaten eggs, then in the almond flour. Spray coated eggs with oil spray.
Preheat your air fryer to 400 F (200 C) for minutes. Place coated eggs in a single layer in the air fryer basket. Fry at 400 F (200 C) for 12-15 minutes, turning once halfway through. Serve hot.
