Air Fryer Toad in the Hole
Ingredients
4 pork sausages, Cumberland or traditional British bangers
3/4 cup flour
2 large eggs
1/2 cup milk
¼ teaspoon salt, to taste
¼ teaspoon black pepper, to taste
1 tablespoon vegetable oil, or beef dripping
1 sprig thyme, or rosemary
Directions
Whisk flour, eggs, milk, salt, and pepper in a bowl until smooth and the consistency of single cream. Cover and refrigerate for at least 30 minutes.
Set to 200°C (400°F) for 3 minutes.
Prick sausages with a fork and place in a small ovenproof dish with the oil or beef dripping.
Cook at 200°C for 8 minutes, turning halfway, until lightly browned and the fat is shimmering hot.
Working quickly, pour cold batter around the sausages. Scatter over fresh herbs if using.
Cook at 200°C for 15–18 minutes without opening the air fryer, until the batter is deeply golden, puffed, and crisp at the edges.
Serve immediately with onion gravy and your favorite sides.
