Air Fryer Caprese Chicken

Ingredients

2 boneless, skinless chicken breasts (about 1-inch thick)
1/2 cup pesto
1/2 cup fresh tomatoes (about 10 slices, halved)
8 oz fresh mozzarella (5 slices cut in half – total 10 slices)
1/2 tsp salt (or to taste)
1/2 tsp Italian seasoning
1/2 tsp garlic powder
1/4 tsp black pepper

Directions

Instructions

Using a sharp knife, make about 5 evenly spaced slits across each chicken breast without cutting all the way through.

In a small bowl, combine pesto, Italian seasoning, garlic powder, salt, and pepper.
Rub this mixture over the chicken and into each slit.

Place a slice of mozzarella and a slice of tomato (cut to fit if necessary) into each slit.

Preheat the air fryer to 375°F (190°C).
Place chicken breasts in the basket and cook for 12–15 minutes or until the internal temperature reaches 165°F (74°C).

Let chicken rest for 5 minutes before serving. Enjoy as is or with your favorite side dish.
