Air Fryer Cheesy Chicken Fritters
Ingredients
1.5 lbs (680g) raw chicken breast or thighs, finely chopped (or use ground chicken)
1 cup shredded mozzarella cheese (or cheddar, or a mix)
2 large eggs
¼ cup mayonnaise (adds moisture and richness)
⅓ cup almond flour or breadcrumbs (adjust for consistency)
2 tbsp fresh parsley or green onions, finely chopped
2 garlic cloves, minced
½ tsp salt
¼ tsp black pepper
½ tsp paprika (optional)
¼ tsp chili flakes or cayenne (optional, for a kick)
Directions
Finely chop raw chicken with a sharp knife (pea-sized pieces), or use ground chicken for ease.
Place in a large bowl.
Add eggs, mayo, cheese, garlic, parsley/green onion, and seasonings to the bowl with chicken. Stir to combine.
Add almond flour or breadcrumbs gradually — the mixture should be thick enough to hold its shape when scooped but still moist.
Preheat your air fryer to 375°F (190°C) for about 3–5 minutes.
Lightly spray the air fryer basket with oil or line it with parchment paper with holes for airflow.
Scoop ~2 tbsp of the chicken mixture and form into patties (~½ inch thick).
Place fritters in the basket in a single layer (cook in batches if needed).
Air fry at 375°F (190°C) for 12–15 minutes, flipping once halfway through, until golden brown and cooked through (internal temp should be 165°F / 74°C).
Let rest for 2 minutes, then serve with dipping sauces like:
Garlic aioli
Spicy mayo
Ranch
Honey mustard
