Air Fryer Chicken and Broccoli Casserole
Ingredients
1 tablespoon olive oil
1 onion, diced
2 teaspoon garlic, minced
1 pound boneless, skinless chicken breast,, diced
1 teaspoon salt
1/2 teaspoon black pepper
1 cup white rice, cooked and cooled.
1 cup heavy cream
2 1/2 cup chicken broth, divided
2 cups broccoli florets
1 cup cheddar cheese, shredded
1/4 cup panko
2 tablespoons butter, cut into pieces
Directions
Season the diced chicken with salt and black pepper. Heat the olive oil in a large skillet over medium heat. Add the diced onions and sauté until translucent, about 4-5 minutes.
Add minced garlic and diced chicken to the skillet. Cook until the chicken is fully cooked.
Stir in the white rice, heavy cream, and 1 cup of chicken broth. Simmer for about 10 minutes until the rice is fully cooked.
Add the remaining chicken broth, broccoli florets, and shredded cheddar cheese. Cook for another 10 minutes until the broccoli becomes tender.
Transfer the mixture to a baking pan. Sprinkle panko breadcrumbs evenly over the top and add butter pieces. Air fry at air fryer temperature at 350 degrees F, for 5-10 minutes, or until the top turns golden brown.
