Air Fryer Chicken Meatballs

Ingredients

To Make Meatballs:
2 tablespoons olive oil
1 tablespoon minced garlic
1 teaspoon salt
1 teaspoon freshly ground black pepper
2 large eggs, beaten
1/2 teaspoon smoked paprika
1 teaspoon onion powder
2 pounds ground chicken
1/2 cup shredded Parmesan cheese
1 cup panko breadcrumbs

To Make the Sauce:
1/2 cup hot sauce (sriracha)
3/4 cup light brown sugar
1 tablespoon soy sauce
2 tablespoons apple cider vinegar
1/2 teaspoon garlic powder
1/2 teaspoon salt
1 teaspoon red pepper flakes

Directions

In a large mixing bowl, combine the olive oil, garlic, salt, black pepper, eggs, paprika, and onion powder. Mix well.

Add the ground chicken, breadcrumbs, and Parmesan. Combine, but do not overmix.

Using 3 tablespoons of chicken mixture per meatball, make meatballs. Transfer to the air fryer basket. Spray the meatballs with nonstick cooking spray.

Working in batches, fry at 400 F (200 C) for 10 minutes. Turn meatballs and spray with more cooking spray. Fry for a further 6-7 minutes. Repeat with remaining meatballs.

Remove one cooked meatball at a time, then dip in the sauce. Return to the basket. Repeat until all have been coated. Fry for additional 2 minutes.

To make the sauce: In a small saucepan, combine all ingredients, except red pepper flakes. Mix well. Cook over medium heat, stirring often until sauce thickens. Add red pepper flakes and stir well to combine.
