Air Fryer Chicken Piccata

Ingredients

2 large eggs, beaten
3 tablespoons freshly squeezed lemon juice, divided
1 teaspoon garlic powder
1/2 cup all-purpose flour
1/2 cup grated Parmesan cheese
1 teaspoon salt
1 pound boneless and skinless chicken breasts
2 tablespoons unsalted butter
2 tablespoons capers
1/2 cup chicken broth

Directions

In a medium mixing bowl, combine beaten eggs, 1 tablespoon lemon juice, and garlic powder. Whisk well and set aside.

In a shallow bowl, combine all-purpose flour, grated Parmesan cheese, and salt. Stir well.

Preheat your air fryer to 375 F (190 C) for 5 minutes.

Grease the air fryer basket with nonstick cooking spray.

Cover the chicken breasts with plastic wrap, then pound with mallet until uniform and thin. Dredge pounded chicken in flour mixture first, the in egg mixture, and then in flour mixture again.

Place seasoned chicken in the air fryer basket. Fry at 375 F (190 C) for 14-15 minutes.

Meanwhile, melt butter in small saucepan over medium heat. Stir in chicken broth, remaining lemon juice, and capers. Bring the sauce to simmer, allowing to simmer and reduce slightly. Serve over fried chicken.
