Air Fryer Chicken Taquitos
Ingredients
3 boneless and skinless chicken breasts, boiled and shredded
1 can yellow corn, drained
2 jalapenos, seeded and diced
1/2 can diced green chilies
1/4 red onion, peeled and diced
8 oz cream cheese
1/4 cup sour cream
1 teaspoon ground cumin
1/2 teaspoon chili powder
1/2 teaspoon freshly ground black pepper
24 corn tortillas
Directions
In a large mixing bowl, combine drained corn, jalapeƱos, green chilies, red onion, cumin, chili powder, and black pepper. Stir well, then add shredded chicken and mix to combine. In a separate bowl, combine cream cheese, sour cream, and freshly squeezed juice of 1 lime. Whisk well. Pour into the bowl with the chicken mixture and mix well.
Heat corn tortillas on a nonstick skillet for 30 seconds per side, or until pliable. Add 3 tablespoons of chicken mixture to the center of each tortilla, then spread down the middle in a line. Roll into taquitos and set aside.
Preheat your air fryer to 400 F (200 C) for 5 minutes. Working in batches, place taquitos in the air fryer basket. Lightly spray with canola oil.
Fry at 400 F (200 C) for 8 minutes, turning once halfway through the cooking. Repeat with remaining taquitos. Serve hot with guacamole.
