Air Fryer Stuffed Zucchini Boats
Ingredients
4 medium zucchini, halved longways
2 tablespoons olive oil
1 cup diced yellow onion
1 pound ground chicken
1 cup sliced mushrooms
1 tablespoon Italian seasoning
1 tablespoon paprika
1 teaspoon minced garlic
1½ cups fresh tomatoes, diced
1 cup grated Mozzarella cheese, divided
Directions
Place halved zucchini on a large plate. Scoop out the centers and discard them.
Heat the oil in a large nonstick skillet over medium-high heat. Add onions and mushrooms. Saute, stirring occasionally, until onions are soft. Stir in ground chicken and continue cooking and stirring occasionally, until browned. Add spices and minced garlic. Mix well. Stir in diced tomatoes. Add half of the cheese.
Evenly distribute the chicken mixture into prepared zucchini boats. Transfer stuffed zucchini boats to the air fryer basket. Fry at 350 F (175 C) for 8 minutes. Top with remaining grated cheese and cook for a further 2 minutes.
