Air Fryer Breaded Cod Cakes
Ingredients
1 pound (480 g) cod fillets, chunked
1/3 cup fresh basil leaves
3 cloves garlic, peeled and crushed
1/2 teaspoon smoked paprika
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 large egg, beaten
1 cup Panko breadcrumbs
Directions
In a food processor, combine cod, basil, garlic, paprika, salt, and black pepper. Process until cod is finely chopped, stirring occasionally.
Form into 8 patties. Dip fish patties into the egg, then into the breadcrumbs. Spray with cooking oil on one side.
Working in batches, place the cakes in the air fryer basket, oil-side down. Spray with more oil.
Fry at 400 F (200 C) for 12 minutes, or until golden brown and cooked through. Serve hot.
