Air Fryer Cod Croquettes

Ingredients

3 large eggs, divided
12 oz (360 g) raw cod fillets, flaked apart
1/4 cup (60 ml) milk
1/2 cup instant mashed potatoes
2 teaspoons olive oil
1/3 cup chopped fresh dill
1 shallot, minced
3/4 cup plus 2 tablespoons breadcrumbs, divided
1 teaspoon freshly squeezed lemon juice
1 teaspoon kosher salt
1/2 teaspoon dried thyme
1/4 teaspoon freshly ground black pepper

Directions

In a medium mixing bowl, beat 2 of the eggs. Add the cod, mashed potatoes, olive oil, ill, shallot, garlic, 2 tablespoons of breadcrumbs, lemon juice, salt, black pepper, and thyme. Mix well and refrigerate for 30 minutes.

Remove fish mixture form the refrigerator and transfer to a large bowl. Measure out about 3½ tablespoons of cod mixture and roll to form a log about 3-inches (7.5 cm) long.

In a small mixing bowl, beat the remaining egg. In a separate bowl, place the remaining breadcrumbs. Dip the fish croquettes in the egg, then coat in the breadcrumbs. Transfer to a work surface and spray both sides with nonstick cooking spray.

Preheat your air fryer to 400 F (200 C) for 5 minutes. Working in batches, place croquettes in the air fryer basket in a single layer. Fry at 350 F (175 C0 for 10 minutes, flipping halfway through, or until golden.

Serve hot.
