Air Fryer Shrimp and Vegetables
Ingredients
For the Shrimp:
1 lb (450g) raw shrimp, peeled and deveined
1 tbsp olive oil
1 tsp garlic powder
½ tsp smoked paprika (optional)
½ tsp onion powder
¼ tsp crushed red pepper flakes (optional)
Salt and pepper to taste
Juice of ½ lemon (optional)
For the Vegetables:
1 zucchini, sliced into half-moons
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 small red onion, sliced
1 cup broccoli florets
1 tbsp olive oil
½ tsp Italian seasoning or dried oregano
Salt and pepper to taste
Directions
In a bowl, toss shrimp with olive oil, garlic powder, paprika, onion powder, red pepper flakes, salt, and pepper. Set aside to marinate while prepping the vegetables.
In a separate bowl, toss all the vegetables with olive oil, Italian seasoning, salt, and pepper.
Preheat your air fryer to 375°F (190°C) for 3–5 minutes.
Add vegetables to the air fryer basket in a single layer (work in batches if needed).
Cook at 375°F (190°C) for 10–12 minutes, shaking the basket halfway through, until tender and slightly charred.
Once veggies are done, add the shrimp on top of the vegetables or cook them separately.
Air fry at 375°F (190°C) for 5–7 minutes, or until the shrimp are pink and opaque. Do not overcook.
Drizzle lemon juice over shrimp and veggies before serving, if desired.
Serve on its own, over rice, quinoa, or noodles.
