Air Fryer Eggplant Parmigiana

Ingredients

1 medium eggplant, sliced
2 cups Italian breadcrumbs
1/4 cup shredded Parmesan, plus more for topping
1 tablespoon garlic powder
1 tablespoon dried parsley
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
2 large eggs, beaten
1 cup tomato sauce
1 cup shredded Mozzarella cheese

Directions

In a medium mixing bowl, combine Italian breadcrumbs, Parmesan cheese, garlic powder, parsley, and seasoning. Mix well to combine.

Preheat your air fryer to 390 F (195 C) for 5 minutes.

In another mixing bowl, combine beaten eggs, salt, and black pepper. Whisk well.

Dredge each eggplant slice in the egg mixture, then the breadcrumb mixture. Transfer breaded eggplants onto a baking sheet.

Spray the air fryer basket with nonstick cooking spray. Place eggplants in a single layer in the air fryer basket, spraying each with cooking spray.

Fry at 390 F (195 c) for 8 minutes, flipping and spraying halfway through. Once eggplants are done and crispy, top each with tomato sauce, then with shredded Mozzarella. Fry for a further 2-3 minutes, or until cheese is melted.
