Air Fryer Peppers and Mushrooms
Ingredients
2 cups bell peppers (any color), sliced into strips
2 cups mushrooms (white, cremini, or baby bella), halved or thickly sliced
1½ tbsp olive oil
½ tsp garlic powder
½ tsp onion powder
½ tsp smoked paprika (optional, adds depth)
Salt and pepper, to taste
Optional: 1 tsp balsamic vinegar or soy sauce for flavor boost
Fresh herbs for garnish (parsley, thyme, or basil)
Directions
Wash and dry the mushrooms and peppers thoroughly. Slice mushrooms in halves or thick slices; slice peppers into strips.
In a large bowl, toss peppers and mushrooms with olive oil, garlic powder, onion powder, paprika, salt, and pepper. Add balsamic vinegar or soy sauce if using.
Preheat air fryer to 375°F (190°C).
Place veggies in the air fryer basket in a relatively even layer.
Air fry for 12–15 minutes, shaking the basket halfway. Cook until mushrooms are browned and peppers are slightly charred on the edges.
Serve immediately or let cool for meal prep. Garnish with herbs if desired.
