Air Fryer Salt & Vinegar Fingerling Taters
Ingredients
1 lb fingerling potatoes, cut in half, lengthwise
5 c water
1 c white vinegar
2 tsp salt, kosher variety
2 Tbsp grape seed oil
Directions
Add the water, vinegar, and salt, to a pot over medium-high heat.
While the water is coming to the boil, cut the taters in half, lengthwise.
Add the taters to the pot and reduce to a simmer. Continue to simmer, until the potatoes are cooked, about 12 – 15 minutes. If you insert a paring knife into the taters and it goes in without resistance, then they are cooked.
Remove from the pan, and allow them to rest for about 10 minutes.
Place them into a bowl, and toss with the grape seed oil.
Use your hand, or the bottom of a large spatula, to smash the taters.
Note: Do not flatten, just crush down a bit.
