Air Fryer Southwest Meatloaf
Ingredients
1 pound ground beef, or a mix of beef and pork
1/2 cup breadcrumbs, or crushed tortilla chips for a Southwest twist
1/3 cup onions, diced
1/3 cup bell peppers, diced
1/4 cup corn, optional
1/4 cup black beans, drained and rinsed (optional)
1 large egg, lightly beaten
2 tablespoons ketchup
1 tablespoon tomato paste
1 tablespoon taco seasoning
1 teaspoon garlic powder
1 teaspoon smoked paprika
1/2 teaspoon cumin
1/2 teaspoon chili powder
1/4 teaspoon salt
1/4 teaspoon black pepper
Topping Ingredients:
2 tablespoons ketchup
1 teaspoon hot sauce or taco sauce, optional
Directions
In a large mixing bowl, combine the ground beef, breadcrumbs, onions, bell peppers, corn, black beans, egg, ketchup, tomato paste, and all the seasonings. Mix until just combined; avoid over mixing for a tender texture.
Form the mixture into a loaf shape that fits comfortably in your air fryer basket or tray. Use parchment paper or foil underneath for easier handling if needed.
Place the meatloaf in the air fryer basket. Cook at 375°F (190°C) for 25–30 minutes. Check halfway through to ensure even cooking.
In a small bowl, mix ketchup with hot sauce or taco sauce. After 20 minutes of cooking, spread the topping over the meatloaf for a flavorful glaze.
Continue air frying until the internal temperature of the meatloaf reaches 160°F (71°C). Use a meat thermometer for accuracy.
Let the meatloaf rest for 5–10 minutes before slicing.
