Air Fryer Banana Poke Cake

Ingredients

2 large bananas, ripe
1 box of yellow cake mix
2 large eggs
1/2 cup vegetable oil
1 cup water
1 box instant vanilla pudding mix
2 cups milk, cold milk
8 ounces whipped topping
12 slices Banana , slices for garnish

Directions

Preheat your air fryer to 320°F (160°C). This ensures that it’s ready to bake your cake.

In a mixing bowl, mash the ripe bananas until they’re smooth and no large chunks remain. These bananas will infuse your cake with natural sweetness and flavor.

Add the yellow cake mix, eggs, vegetable oil, and water to the mashed bananas. Mix everything together until well combined. The batter should be smooth and free of lumps.

Grease an 8-inch (20 cm) round cake pan with non-stick cooking spray to prevent sticking.

Pour the cake batter into the greased cake pan, spreading it evenly.

Place the cake pan in the preheated air fryer. Cook the cake at 320°F (160°C) for 20-25 minutes. The exact cooking time may vary depending on your air fryer, so check the cake’s doneness by inserting a toothpick into the center. It should come out clean when the cake is ready.

While the cake is cooking, prepare the instant vanilla pudding mix. In a separate bowl, whisk the pudding mix and cold milk together until it thickens. This will be the creamy filling for your cake.

Once the cake is done, remove it from the air fryer. While it’s still warm, use the handle of a wooden spoon to poke holes evenly across the cake’s surface.

Pour the prepared pudding over the cake, ensuring it seeps into the holes you’ve created. Spread it evenly to cover the entire cake.

Place the cake in the refrigerator and let it chill for at least 1-2 hours, allowing the pudding to set and the cake to cool.

After the cake has chilled, spread the whipped topping evenly over the pudding layer.

If desired, garnish the cake with banana slices for a decorative touch and an extra hint of banana flavor.

Slice and serve.
