Air Fryer Peach Salmon

Ingredients

2 salmon fillets, about 6 oz each, skin-on
2 peaches, peeled, pitted, and sliced 1/4 inch thick
1 tablespoon olive oil
1 tablespoon honey
1 tablespoon soy sauce, or tamari for gluten-free
1 tablespoon lemon juice, freshly squeezed
1/2 teaspoon garlic powder
1/4 teaspoon salt, plus more for seasoning
1/4 teaspoon black pepper, plus more for seasoning

Directions

In a small saucepan, combine the honey, soy sauce, lemon juice, garlic powder, salt, and pepper.

Heat over medium, stirring occasionally, for 5 to 7 minutes until the glaze thickens enough to coat the back of a spoon. Remove from heat and set aside.

Preheat the air fryer to 400°F (200°C).

Pat the salmon fillets completely dry with paper towels. Brush both sides with olive oil and season with salt and pepper.

Place the fillets in the air fryer basket skin-side down, leaving space between them.

Arrange the peach slices over the top of each fillet, pressing gently so they adhere.

Air fry for 8 to 10 minutes, depending on thickness.

During the last 2 minutes, brush the fillets generously with the peach glaze and let it set.

Cook until the internal temperature reaches 145°F (63°C) and the salmon flakes easily with a fork.

Remove from the basket, drizzle with any remaining glaze, and serve immediately.
