Air Fryer Turkey Chili Smothered Sweet Potatoes
Ingredients
4 medium sweet potatoes
1 tablespoon olive oil
½ pound ground turkey
1 small onion, diced
2 teaspoons minced garlic
15 ounces diced tomatoes
3 ounces tomato paste
15 ounces black beans, drained and rinsed
1 tablespoon chili powder
½ teaspoon dried oregano
½ teaspoon ground cumin
1 cup water
½ teaspoon salt
¼ teaspoon black pepper
½ cup shredded cheddar or Monterey Jack cheese
2 tablespoons cilantro, chopped
2 tablespoons diced scallions
Directions
Prepare the Potatoes: Brush the sweet potatoes with olive oil and poke holes with a fork. Preheat the air fryer to 350°F (180°C). Place the sweet potatoes in the air fryer basket and cook for 35-40 minutes or until tender (cooking time will depend on the size of the potatoes).
Make the Turkey Chili: In a large pot, sauté ground turkey in olive oil over medium heat. Add diced onions and minced garlic, cooking until the onions are translucent. Stir in diced tomatoes, tomato paste, black beans, chili powder, oregano, cumin, water, salt, and pepper. Bring to a simmer and cook for 10-15 minutes.
Assemble the Dish: Once the potatoes are cooked, cut them lengthwise and mash the insides slightly. Spoon ¾ cup of turkey chili onto each sweet potato and top with 2 tablespoons of shredded cheese. Return the potatoes to the air fryer basket for a few minutes to melt the cheese.
Serve: Once the cheese is melted, garnish the potatoes with fresh cilantro and diced scallions. Serve immediately and enjoy!
