Air Fryer Ground Beef Casserole
Ingredients
1 pound lean ground beef
2 tablespoons taco seasoning
1/4 cup water
1/2 cup bell pepper, diced
1 large tomato, diced
10 ounces Rotel
4 large eggs
1/3 cup sour cream
1/3 cup heavy cream
1/2 cup cheddar cheese, shredded
1 stalk green onion, sliced
Directions
Heat a large skillet over medium high heat and add the ground beef. Cook, breaking it apart, until browned with no pink remaining. Stir in the bell pepper, diced tomato, Rotel, water, and taco seasoning, then simmer for 1 to 2 minutes.
In a small bowl, whisk the eggs, sour cream, and heavy cream until smooth and well combined.
Spray a baking pan with cooking spray. Add the beef mixture, then pour the egg mixture evenly over the top.
Place the pan in the air fryer and set the temperature to 300°F. Cook for 15 to 18 minutes, until the center is set.
Sprinkle the shredded cheddar over the top when the cooking time is almost done. Cook for a few more minutes until the cheese melts.
Once the cheese is melted and bubbly, remove from the air fryer, top with sliced green onion, and serve.
